Need some sweet goodness to get over a persistent cold? Try pumpkin soup!
Believe it or not, pumpkin soup was a staple meal for the prisoners of war in North Vietnamese prison camps during the Vietnam War. Now, people around the world prepare it in the comforts of their homes, especially when they want to get over a cold. And you can do it, too!
Ingredients:
- 6 cups chicken stock
- 1 1/2 teaspoons salt
- 4 cups pumpkin puree
- 1 teaspoon chopped fresh parsley
Step 1
Heat stock, salt, pumpkin, onion, thyme, and garlic. Bring to a boil, then reduce heat to low, and simmer for about 30 minutes uncovered.
Step 2
Make the puree by adding the previously cooked meal in small batches (1 cup at a time) to a food processor or blender.
Step 3
Return the puree to the pan, and bring to a boil again. Be sure to reduce heat to low, and simmer for another 30 minutes, uncovered. Once it’s done, pour the soup into soup bowls and garnish with fresh parsley.
